Peanut Butter Balls

Ingredients:

  • 1 cup peanut butter (creamy or chunky, based on preference)
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips (or milk chocolate chips, if preferred)
  • 1 tablespoon coconut oil or vegetable oil (for melting the chocolate)

Instructions:

  1. Make the Peanut Butter Mixture:
    • In a large mixing bowl, combine the peanut butter, softened butter, powdered sugar, graham cracker crumbs, and vanilla extract.
    • Mix everything together until well combined and smooth. You can use a spatula or your hands to mix, but it should form a thick dough-like consistency.
  2. Shape the Peanut Butter Balls:
    • Scoop out about 1 tablespoon of the peanut butter mixture at a time and roll it into a ball between your hands.
    • Place the rolled peanut butter balls onto a baking sheet lined with parchment paper or wax paper.
    • Once you’ve shaped all the balls, place the tray in the freezer to chill for about 30 minutes. This will help them firm up before dipping in chocolate.
  3. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, combine the chocolate chips and coconut oil (or vegetable oil).
    • Microwave in 20-30 second intervals, stirring between each, until the chocolate is fully melted and smooth.
  4. Dip the Peanut Butter Balls:
    • Once the peanut butter balls have chilled, use a fork or toothpick to dip each ball into the melted chocolate. Make sure the ball is fully coated in chocolate.
    • Gently tap the fork or toothpick to remove excess chocolate, then place the coated ball back onto the parchment-lined tray.
  5. Chill Again:
    • After all the peanut butter balls are coated in chocolate, place the tray back in the refrigerator or freezer to allow the chocolate to set, about 20-30 minutes.
  6. Serve and Enjoy:
    • Once the chocolate coating is set, your peanut butter balls are ready to enjoy! Keep them stored in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.
