Ingredients:
- 1 cup grated carrots
- 1 cup all-purpose flour (or whole wheat flour)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C). You can also cook these in a pan on the stove if you prefer.
- Mix the ingredients: In a bowl, combine the grated carrots, flour, and shredded cheese. Mix until everything is well incorporated. You may need to use your hands to bring it together into a dough. If the dough feels too dry, add a tablespoon of water at a time until it comes together.
- Shape the dough: Roll the dough out on a floured surface into flatbreads (about 1/4 inch thick). You can make them any size you like.
- Cook: If baking, place the flatbreads on a parchment-lined baking sheet and bake for 15-20 minutes or until golden and crispy. If pan-frying, heat a little oil in a skillet over medium heat, and cook the flatbreads for 3-4 minutes per side until golden brown.
