- 2 tablespoons honey or maple syrup (or your preferred sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips
- Optional: 1 tablespoon chia seeds or flaxseeds for added texture and nutrients
Instructions:
- Blend the Cottage Cheese:
- In a food processor or blender, blend the cottage cheese until smooth and creamy. This helps give the dough that cookie dough-like texture.
- Mix the Dry Ingredients:
- In a separate bowl, mix together the rolled oats, almond flour, salt, and optional chia or flaxseeds.
- Combine Everything:
- Add the oat mixture to the blended cottage cheese along with honey or maple syrup and vanilla extract. Stir until everything is well combined.
- Fold in Chocolate Chips:
- Gently fold in the mini chocolate chips. If you want, you can also add a few extra chocolate chips on top for decoration.
- Chill & Serve:
- For a firmer cookie dough texture, chill the dough in the refrigerator for about 30 minutes. Once chilled, you can roll the dough into small bite-sized balls or just scoop with a spoon and enjoy straight from the bowl!

- Store any leftovers in an airtight container in the fridge for up to a week (if it lasts that long!).
