Ingredients:
- 1 rotisserie chicken, shredded
- 2 (8 oz) bricks of cream cheese
- 2 cups shredded fiesta blend cheese
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp parsley
- 1 (1 oz) packet dry Hidden Valley Ranch seasoning mix
- ½ cup chopped cooked bacon
Instructions:
- Preheat the oven to 375°F.
- Lightly grease the bottom of a 9×11 glass baking dish with a small amount of olive oil.
- Spread the shredded chicken evenly in the baking dish. Add 1/2 cup of water over the chicken to keep it moist while baking. (You can also use 1/2 cup milk or heavy whipping cream if you prefer a creamier base).
- Sprinkle the salt, onion powder, garlic powder, and ranch seasoning over the chicken.
- Place the softened cream cheese on top of the chicken, spreading it out evenly to cover the entire casserole.
- Sprinkle the cooked bacon pieces and shredded fiesta blend cheese over the top.
- Bake for 30 minutes or until heated through. For a crispy finish, broil the casserole for the last couple of minutes.
- Once done, sprinkle parsley over the top for garnish and serve.
Notes:
- Do not make the ranch dressing; use the dry ranch seasoning mix.
- You can adjust the amount of ranch seasoning based on your personal preference.
- If you prefer, you can make this casserole without bacon or add extra bacon to suit your taste!
