Crack Chicken Casserole

Ingredients:

  • 1 rotisserie chicken, shredded
  • 2 (8 oz) bricks of cream cheese
  • 2 cups shredded fiesta blend cheese
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp parsley
  • 1 (1 oz) packet dry Hidden Valley Ranch seasoning mix
  • ½ cup chopped cooked bacon

Instructions:

  1. Preheat the oven to 375°F.
  2. Lightly grease the bottom of a 9×11 glass baking dish with a small amount of olive oil.
  3. Spread the shredded chicken evenly in the baking dish. Add 1/2 cup of water over the chicken to keep it moist while baking. (You can also use 1/2 cup milk or heavy whipping cream if you prefer a creamier base).
  4. Sprinkle the salt, onion powder, garlic powder, and ranch seasoning over the chicken.
  5. Place the softened cream cheese on top of the chicken, spreading it out evenly to cover the entire casserole.
  6. Sprinkle the cooked bacon pieces and shredded fiesta blend cheese over the top.
  7. Bake for 30 minutes or until heated through. For a crispy finish, broil the casserole for the last couple of minutes.
  8. Once done, sprinkle parsley over the top for garnish and serve.

Notes:

  • Do not make the ranch dressing; use the dry ranch seasoning mix.
  • You can adjust the amount of ranch seasoning based on your personal preference.
  • If you prefer, you can make this casserole without bacon or add extra bacon to suit your taste!
