Cabbage with Eggs

Ingredients:

  • 1 medium head of cabbage, chopped
  • 4 large eggs
  • 2 tablespoons olive oil (or butter)
  • 1 onion, chopped (optional)
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon paprika (optional)
  • A pinch of red pepper flakes (optional for a little heat)
  • Fresh herbs like parsley (optional, for garnish)

Directions:

  1. Prepare the Cabbage: Chop the cabbage into thin strips. You can also cut it into chunks if you prefer a heartier texture.
  2. Sauté the Vegetables: In a large skillet or frying pan, heat the olive oil or butter over medium heat. Add the chopped onion (if using) and cook for 2-3 minutes until softened. Then add the garlic and cook for another 30 seconds until fragrant.
  3. Cook the Cabbage: Add the chopped cabbage to the pan. Season with salt, pepper, paprika, and red pepper flakes (if using). Stir occasionally and cook for 5-7 minutes until the cabbage is tender but still slightly crisp. If you prefer softer cabbage, cook for a few more minutes.
  4. Add the Eggs: Push the cabbage to one side of the pan, creating space for the eggs. Crack the eggs directly into the pan and scramble them gently, mixing them with the cabbage. Cook for 2-3 minutes, or until the eggs are fully cooked and scrambled into the cabbage.
  5. Serve: Garnish with fresh herbs (like parsley) if desired, and serve hot as a delicious, healthy dinner!
