Chicken Cobbler Recipe

Ingredients:

  • 3 cups cooked chicken (shredded or cubed)
  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (like carrots, peas, corn, or green beans)
  • 2 cups chicken broth
  • 1 cup heavy cream or milk
  • 1/4 cup all-purpose flour

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter

Directions:

  1. Prepare the Chicken and Veggies:
    • In a large skillet, heat olive oil or butter over medium heat.
    • Add chopped onion and garlic, sautéing for about 5 minutes until softened.
    • Stir in the mixed vegetables and cook for another 3-5 minutes.
    • Add the cooked chicken, chicken broth, and heavy cream. Stir well to combine.
    • Sprinkle in the flour and stir until the sauce thickens. Season with salt, pepper, thyme, and garlic powder (if using).
    • Let the mixture simmer for about 5-10 minutes until everything is well combined and heated through.
  2. Make the Biscuit Topping:
    • In a separate bowl, mix the flour, baking powder, and salt.
    • Stir in the milk and melted butter until just combined (do not overmix).
  3. Assemble the Cobbler:
    • Pour the chicken and veggie mixture into a greased 9×13-inch baking dish.
    • Drop spoonfuls of the biscuit topping over the chicken mixture, covering most of the surface (it doesn’t have to be perfect).
  4. Bake:
    • Preheat your oven to 400°F (200°C).
    • Bake for 20-25 minutes, or until the biscuit topping is golden brown and cooked through.
  5. Serve:
