Chicken Fettuccine Alfredo

 

This  is a lighter, high-protein version of the classic comfort dish! The creamy sauce is made with cottage cheese, almond milk, and Parmesan, making it deliciously creamy without all the extra calories and fat. Perfect for a satisfying dinner that’s both comforting and nutritious! 😋✨

Ingredients:

For the Chicken:Chicken Fettuccine Alfredo

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the Alfredo Sauce:

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1/2 cup unsweetened almond milk (or any milk of choice)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley (optional, for garnish)

For the Fettuccine:

  • 8 oz whole wheat or regular fettuccine pasta (or any pasta of your choice)

Instructions:

  1. Cook the Chicken:
    • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
    • Cook the chicken for about 5-6 minutes per side, or until fully cooked and golden brown. Remove from the pan and set aside to rest before slicing.
  2. Make the Alfredo Sauce:
    • In a blender or food processor, combine the cottage cheese, almond milk, Parmesan cheese, garlic powder, salt, and pepper. Blend until smooth and creamy.
    • Pour the mixture into a small saucepan and heat over medium-low heat, stirring constantly until warm and creamy. Adjust the seasoning to taste.
  3. Cook the Fettuccine:
    • While the sauce is heating, cook the fettuccine according to the package directions. Drain and set aside.
  4. Combine:
    • Once the chicken has rested, slice it into thin strips.
    • In a large mixing bowl or skillet, combine the cooked fettuccine, Alfredo sauce, and sliced chicken. Toss to coat the pasta in the creamy sauce.
  5. Serve:
    • Serve the fettuccine Alfredo with a sprinkle of fresh parsley for garnish, if desired. Enjoy immediately!
