Ingredients:
- 1 cup cauliflower rice (or use any preferred veggie like zucchini or eggplant)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg (for binding)
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt & pepper, to taste
- 1/2 cup pizza sauce
- Toppings: pepperoni, bell peppers, onions, mushrooms, olives (or any pizza topping you love)
Instructions:
- Preheat your oven to 400°F (200°C).
- Prepare the “crust” base: If using cauliflower rice, lightly steam it to soften. Then, squeeze out excess moisture using a clean towel or cheesecloth.
- In a bowl, combine cauliflower rice, mozzarella, Parmesan, egg, oregano, garlic powder, salt, and pepper. Stir everything together until well mixed.
- Spread the mixture evenly on a parchment-lined baking sheet, shaping it into a pizza shape (about 1/2 inch thick).
- Bake for 10-15 minutes, or until golden and crispy on the edges.
- Remove the “crust” from the oven, top with pizza sauce, cheese, and your desired toppings.
- Bake again for 5-7 minutes until the cheese is melted and bubbly.
- Slice and enjoy your crustless, low-carb pizza!
