- 6 hard-boiled eggs
- 3 tbsp mayonnaise

Prepare the eggs:
- Peel the hard-boiled eggs and slice them in half lengthwise.
- Carefully remove the yolks and place them in a small bowl.

Make the filling:
- Mash the yolks with a fork until they are smooth.
- Add mayonnaise, Dijon mustard, vinegar (or lemon juice), salt, and pepper to the mashed yolks. Stir until everything is well combined and creamy. Taste and adjust seasoning if needed.

Fill the egg whites:
- Spoon or pipe the yolk mixture back into the hollows of the egg whites.

Garnish and serve:
- Sprinkle a little paprika on top for a nice touch and extra flavor. Optionally, you can add some chopped chives or dill for a fresh herb finish.

- Refrigerate for at least 30 minutes before serving to let the flavors meld together.
