- 1/4 cup dark chocolate chips (or more if you love chocolate!)
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
- Mix the base: In a bowl, combine the peanut butter, protein powder, shredded coconut (if using), sweetener, and vanilla extract. Stir everything together until you get a thick dough-like consistency.
- Chill the dough: If the mixture feels too sticky, pop it in the fridge for about 10-15 minutes to firm it up a bit. This will make rolling easier.
- Shape the balls: Once the dough is chilled, use your hands to roll it into small balls (about 1 inch in diameter). You can make them bigger if you prefer, just adjust the number of servings.
- Dip in chocolate: Melt your dark chocolate chips in the microwave or on a double boiler. Once melted, dip each peanut butter ball halfway into the chocolate and place them on parchment paper or a baking sheet.
- Set and chill: Put the balls in the fridge for about 20-30 minutes to let the chocolate harden and the balls firm up.
