Ingredients:
- 1 tin of tuna (in water or olive oil, drained)
- 1/2 avocado (sliced)
- Handful of cherry tomatoes (halved)
- Handful of olives (black or green, pitted and sliced)
- 1/2 small red onion (thinly sliced)
- Handful of chopped cucumber
Dressing:
- 1 tsp Dijon mustard
- Splash of extra virgin olive oil (EVOO)
- Splash of red wine vinegar
- Squeeze of lemon juice
- Capers (to taste)
- Chili flakes (optional, to taste)
- Salt & pepper (to taste)
Instructions:
- Prepare the Salad:
- In a large bowl, combine the drained tuna, sliced avocado, halved cherry tomatoes, sliced olives, red onion, and chopped cucumber.
- Make the Dressing:
- In a small bowl, whisk together Dijon mustard, extra virgin olive oil, red wine vinegar, lemon juice, capers, and chili flakes (if you like a little spice).
- Season with salt and pepper to taste.
- Toss and Serve:
- Pour the dressing over the salad ingredients and gently toss until everything is well coated.
