Ingredients:
For the Coconut Layer:
- 2 1/2 cups sweetened shredded coconut

- 1 teaspoon vanilla extract

- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons unsalted butter
Instructions:
- Prepare the Coconut Layer:
- In a large mixing bowl, combine the shredded coconut, cocoa powder, powdered sugar, and melted butter. Stir to combine.
- Add the milk and vanilla extract, mixing until the coconut mixture becomes thick and sticky.
- Press the coconut mixture into the bottom of an 8×8-inch baking dish or a similar-sized pan lined with parchment paper. Use the back of a spoon to press it down evenly. Place in the fridge to chill while you prepare the chocolate layer.
- Prepare the Chocolate Layer:
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter.
- Microwave in 20-30 second intervals, stirring between each, until the chocolate and butter are fully melted and smooth. (You can also melt the chocolate and butter in a heatproof bowl over a pot of simmering water if you prefer.)
- Assemble the Bars:
- Pour the melted chocolate over the chilled coconut layer, spreading it evenly with a spatula.
- Return the pan to the refrigerator and allow the chocolate to set for at least 1-2 hours or until firm.
- Cut into Bars:
- Once the chocolate is fully set, remove the pan from the refrigerator.
- Use a sharp knife to cut into squares or bars.
