Homemade Chocolate Coconut Bars

Ingredients:

For the Coconut Layer:

  • 2 1/2 cups sweetened shredded coconut
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter

For the Chocolate Layer:

  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions:

  1. Prepare the Coconut Layer:
    • In a large mixing bowl, combine the shredded coconut, cocoa powder, powdered sugar, and melted butter. Stir to combine.
    • Add the milk and vanilla extract, mixing until the coconut mixture becomes thick and sticky.
    • Press the coconut mixture into the bottom of an 8×8-inch baking dish or a similar-sized pan lined with parchment paper. Use the back of a spoon to press it down evenly. Place in the fridge to chill while you prepare the chocolate layer.
  2. Prepare the Chocolate Layer:
    • In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter.
    • Microwave in 20-30 second intervals, stirring between each, until the chocolate and butter are fully melted and smooth. (You can also melt the chocolate and butter in a heatproof bowl over a pot of simmering water if you prefer.)
  3. Assemble the Bars:
    • Pour the melted chocolate over the chilled coconut layer, spreading it evenly with a spatula.
    • Return the pan to the refrigerator and allow the chocolate to set for at least 1-2 hours or until firm.
  4. Cut into Bars:
    • Once the chocolate is fully set, remove the pan from the refrigerator.
    • Use a sharp knife to cut into squares or bars.
  5. Serve and Enjoy:
    • Enjoy your homemade chocolate coconut bars! They are rich, sweet, and perfect for a treat or dessert.

These bars can be stored in an airtight container in the fridge for up to a week. You can also freeze them for longer storage if you like
