Crust Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened shredded coconut (optional, for a bit of texture)
  • 1/4 cup erythritol or monk fruit sweetener (or any keto-friendly sweetener of your choice)
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Lemon Custard Filling:

  • 1 cup fresh lemon juice (about 3-4 lemons)
  • 1/2 cup erythritol or monk fruit sweetener (or preferred keto sweetener)
  • 1 tbsp lemon zest
  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Make the Crust:
    • In a medium-sized bowl, combine the almond flour, shredded coconut (if using), erythritol (or sweetener of your choice), and salt.
    • Stir in the melted butter and vanilla extract until the mixture forms a dough.
    • Press the dough evenly into the bottom of the prepared baking pan to form the crust.
    • Bake the crust for 12-15 minutes, or until golden brown. Remove from the oven and let it cool slightly while you prepare the filling.
  3. Make the Lemon Custard Filling:
    • In a large bowl, whisk the eggs. Add the lemon juice, lemon zest, sweetener, heavy cream, salt, and vanilla extract, and whisk until smooth and well-combined.
    • Pour the lemon mixture over the cooled crust, spreading it evenly.
  4. Bake the Lemon Bars:
    • Bake the bars for 20-25 minutes, or until the filling is set but still slightly jiggles in the center when you tap the pan. The edges should be lightly golden.
    • Allow the bars to cool completely at room temperature, then transfer to the fridge to chill for at least 2 hours to firm up before cutting into squares.
  5. Serve & Enjoy:
    • Once chilled, lift the bars out of the pan using the parchment paper overhang and cut into squares.
    • Optional: Garnish with a little powdered erythritol (or powdered sweetener of choice) on top for a pretty finish.
