Orange Fluff with Greek Yogurt

Ingredients:

  • 1 cup non-fat Greek yogurt (you can use full-fat if you prefer)
  • 1 (3 oz) box of sugar-free instant orange gelatin (like Jell-O)
  • 1/2 cup whipped topping (like Cool Whip, or a lighter alternative)
  • 1/2 cup crushed pineapple (drained well)
  • 1/4 cup mandarin orange segments (drained well)
  • Optional: 1-2 tablespoons honey or sweetener of choice (depending on your sweetness preference)

Instructions:

  1. Prepare the Gelatin: In a large mixing bowl, pour the dry orange gelatin powder. Add the Greek yogurt to the bowl and stir until the gelatin is completely dissolved into the yogurt.
  2. Mix in the Fruit: Stir in the drained crushed pineapple and mandarin orange segments. Make sure the fruit is well-mixed in with the yogurt and gelatin mixture.
  3. Fold in Whipped Topping: Gently fold in the whipped topping to make the fluffier texture. Be careful not to over-mix, so it stays light and airy.
  4. Chill: Refrigerate for at least 1-2 hours before serving. This allows the fluff to set and become even creamier.
  5. Optional Add-Ins: If you want a little extra sweetness, drizzle in some honey or your favorite sweetener.
  6. Serve and Enjoy!: Once it’s chilled, it’s ready to be served as a dessert or snack!
