Sausage Egg and Cheese Breakfast Roll Ups

Sausage, Egg, and Cheese Breakfast Roll-Ups are a great grab-and-go breakfast option, packed with protein and flavor. Here’s how you can make them:

Ingredients:

  • For the Roll-Ups:
    • 4 large flour tortillas (or 6-inch tortillas)
    • 1 lb breakfast sausage (pork, turkey, or your choice)
    • 6 large eggs
    • 1/2 cup shredded cheddar cheese (or your preferred cheese)
    • 1/4 cup milk (optional, for fluffier eggs)
    • 2 tablespoons butter (or oil, for cooking)
    • Salt and pepper, to taste
    • 1/2 teaspoon garlic powder (optional)
    • 1/2 teaspoon onion powder (optional)
  • Optional toppings and add-ins:
    • Salsa
    • Sour cream
    • Avocado slices
    • Hot sauce
    • Fresh herbs (like cilantro or chives)

Instructions:

  1. Cook the sausage:
    • Heat a large skillet over medium heat. Remove the sausage from its casing (if needed) and crumble it into the pan.
    • Cook until browned and fully cooked, breaking it up into smaller pieces as it cooks. Drain excess fat if necessary, and season with a pinch of salt, pepper, garlic powder, and onion powder.
    • Once cooked, remove from the skillet and set aside.
  2. Scramble the eggs:
    • In a bowl, whisk together the eggs, milk (if using), salt, and pepper until fully combined.
    • In the same skillet, melt 1 tablespoon of butter over medium heat.
    • Pour in the eggs and scramble them, stirring occasionally, until they’re cooked through but still soft and creamy. Remove from heat and set aside.
  3. Assemble the roll-ups:
    • Lay out the tortillas on a flat surface.
    • Evenly distribute the cooked sausage onto the center of each tortilla.
    • Add a portion of the scrambled eggs on top of the sausage.
    • Sprinkle shredded cheddar cheese over the eggs. You can also add any extra ingredients you like, such as salsa or avocado.
  4. Roll them up:
    • Carefully roll each tortilla up tightly, folding in the sides as you go to create a neat roll. You can use toothpicks to secure them if necessary.
  5. Optional: Toast the roll-ups:
    • Heat a little butter or oil in the skillet over medium heat.
    • Place the roll-ups seam side down and cook for about 2-3 minutes on each side until golden brown and crispy.
  6. Serve:
    • Once toasted (if you chose to do so), slice each roll-up into 2-3 pieces for easy serving.
    • Serve immediately with salsa, sour cream, or your favorite toppings.

Tips:

  • Meal Prep: These breakfast roll-ups are great for meal prepping! You can store them in the fridge for up to 3 days, or freeze them for up to a month. Just reheat in the microwave or oven when ready to eat.
  • Add veggies: If you’d like to sneak in some veggies, sauté some spinach, bell peppers, or onions with the sausage or eggs.

These roll-ups are a quick, delicious, and customizable breakfast option to start your day right! Enjoy.
