Ingredients:
For the Bread:
- 1 cup sourdough starter (active and bubbly)
- 1/2 cup milk (warm)
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter (melted)
- 1 1/2 cups peeled and diced apples (about 2 medium apples)
For the Fritter Swirl:
- 1/2 cup brown sugar (packed)
- 1 teaspoon ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 1 tablespoon milk (or more if needed)
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix the wet ingredients:
- In a large bowl, combine your active sourdough starter, warm milk, sugar, vanilla, and eggs. Stir well until everything is fully combined.
- Prepare the dry ingredients:
- In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Combine wet and dry ingredients:
- Gradually add the dry ingredients into the wet ingredients. Stir gently until just combined.
- Fold in the melted butter and diced apples. Make sure the apples are evenly distributed throughout the batter.
- Prepare the cinnamon-sugar swirl:
- In a small bowl, combine the brown sugar and cinnamon. Set aside.
- Layer the batter and cinnamon-sugar:
- Spoon about a third of the batter into the prepared loaf pan. Sprinkle a portion of the cinnamon-sugar mixture over the batter.
- Repeat the layering process (batter, cinnamon-sugar, batter, cinnamon-sugar) until all the batter is in the pan. Swirl the batter with a knife to create a marbled effect.
- Bake the bread:
- Place the pan in the oven and bake for 50-60 minutes, or until a toothpick comes out clean when inserted into the center of the loaf. You may need to cover the bread with foil during the last 10-15 minutes of baking if it starts to get too dark on top.
- Prepare the glaze:
- While the bread is cooling, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add more milk to reach the desired consistency for drizzling.
- Glaze the bread:
- Once the bread has cooled slightly (or completely, if you prefer), drizzle the glaze over the top of the loaf.
